Dairy

Today, India is 'The Oyster' of the global dairy industry. It offers opportunities galore to entrepreneurs worldwide, who wish to capitalize on one of the world's largest and fastest growing markets for milk and milk products. A bagful of 'pearls' awaits the international dairy processor in India. The Indian dairy industry is rapidly growing, trying to keep pace with the galloping progress around the world. As the entrepreneur expands his overseas operations to India many profitable options await him. It may be Transfer of Technology, sign joint ventures or use India as a sourcing center for regional exports and so on. The liberalization of the Indian economy beckons to MNC's and foreign investors alike.

Some areas of Indian dairy industry can be strengthened by the induction of specialized technologies and equipment from abroad.

These include:

Raw milk handling: It needs to be upgraded in terms of physico-chemical and microbiological attributes of the milk collected. The use of clarification and bactofugation in raw milk processing can help improve quality of the milk products.

Milk processing: Better operational efficiencies are needed to improve yields and reduce wastage, minimize fat/protein losses during processing, control production costs, save energy and extend shelf life. The adoption of GMP (Good Manufacturing Practices) and HACCP (Hazard Analysis Critical Control Points) would help manufacture milk products conforming to international standards.

Packaging: Another area is the range of packing machines for butter, cheese and the like. Better packaging can help retain nutritive value of products packed and extend shelf life. A cold chain distribution system is needed for proper storage and transportation of dairy products.

Value-added products: There's immense scope for value-added products like desserts, puddings, custards, sauces, mousse, stirred yoghurt, nectars and sherbets.

In this 21st Century, the Indian dairy industry has set its goal to better manage its national resources for enhancing milk production and upgrading milk processing through newer technologies. Multinational dairy giants can carve a niche for themselves in this challenging task, a win-win situation!

NDDB

The National Dairy Development Board (NDDB), India, was founded in 1965 to replace exploitation with empowerment, tradition with modernity, stagnation with growth, transforming dairying into an instrument for the development of India's rural people.

NDDB began its operations with the mission of making dairying a vehicle to a better future for millions of grassroots milk producers. The mission achieved thrust and direction with the launching of "Operation Flood", a program extending over 26 years and which used World Bank loan to finance India's emergence as the world's largest milk producing nation.   Operation Flood's third phase was completed in 1996 and has to its credit a number of significant achievements.

As on March 2006, India’s 1,17,575 village dairy cooperatives federated into 170 milk unions and 15 federations procured on an average 21.5 million liters of milk every day.  12.4 million farmers are presently members of village dairy cooperatives.

Since its inception, the Dairy Board has planned and spearheaded India's dairy programs by placing dairy development in the hands of milk producers and the professionals they employ to manage their cooperatives.  In addition, NDDB also promotes other commodity-based cooperatives, allied industries and veterinary biologicals on an intensive and nation-wide basis.

The Dairy Board's strength lies in leveraging the capabilities of milk marketing federations and milk producers' cooperative unions to bring high quality services and modern technology to the service of rural India. 

Product & Process Technology

As a part of its effort to add value to the business of dairy cooperatives, the Dairy Board identifies, develops, tests and transfers product and process technologies. 

Regional preferences are an important basis, for developing products and their manufacturing processes. In addition equipment has been designed and commercialised for manufacturing dindigenous milk products like shrikhand, paneer, khoa, lassi, gulab jamun, mishti doi and curd as well as popular western products like ice-creams and cheeses.

In developing process, product and equipment technology, emphasis is placed on maintaining high quality standards.  To check milk quality, test kits have been developed.  NDDB also provides services for analysis of dairy product samples.

Perspective 2010

Focus on four key areas. These include Strengthening Cooperative Business, Production Enhancement, Assuring Quality and creating a National Information Network. The State Milk Marketing Federations and the Milk Producers' Cooperative Unions, the architects and key beneficiaries have identified the thrust areas. The plan is designed keeping at helm the benefit to farmers at large. NDDB facilitated the planning process and will provide technical support and need-based finance for implementing Perspective 2010.

Increase liquid milk procurement by cooperatives to 33 per cent (488 lakh kilograms per day) of the marketable surplus in Operation Flood areas, constituting 80 per cent of the national milk produced (i.e. Quadruple liquid milk procurement by year 2010)

Increase liquid milk sales to 365 lakh kilograms per day, more than 60 per cent of the market shares in metros, and on average of close to 50 per cent in the Class I cities served by cooperatives (i.e. Treble fluid milk marketing by year 2010)
